Ingredients
Scale
Main Ingredients
- 2 medium sweet potatoes (about 1 pound), peeled and diced
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh parsley
- 1 large egg
- 1/2 cup milk
- Vegetable oil for frying (about 1 inch deep)
Instructions
- Boil Sweet Potatoes: Begin by boiling the diced sweet potatoes in a pot of salted water for about 15-20 minutes until they are tender. Drain the water and let the sweet potatoes cool slightly to make them easier to handle.
- Mash Potatoes: Transfer the cooked sweet potatoes to a large mixing bowl and mash them thoroughly until smooth and free of lumps, creating a soft base for the fritter batter.
- Mix Ingredients: Add the all-purpose flour, baking powder, salt, ground cumin, paprika, black pepper, chopped green onions, chopped parsley, the large egg, and milk to the mashed sweet potatoes. Stir together until all ingredients are well combined, forming a thick batter suitable for frying.
- Heat Oil: Pour vegetable oil into a large skillet to about 1 inch depth and heat over medium heat. Make sure the oil reaches an appropriate temperature for frying (around 350°F / 175°C), ensuring crisp and evenly cooked fritters.
- Fry Fritters: Using a spoon, drop spoonfuls of the sweet potato mixture into the hot oil. Flatten each fritter slightly with the back of the spoon for even cooking. Fry the fritters in batches, making sure not to overcrowd the pan to maintain oil temperature.
- Cook Until Golden: Fry each side for approximately 3-4 minutes or until the fritters are golden brown and crispy on the outside. Use a slotted spoon to carefully remove them from the oil.
- Drain and Serve: Place the fried fritters on paper towels to absorb excess oil. Serve warm, garnished with additional chopped parsley if desired, for a delightful and flavorful dish.
Notes
- Make sure the oil is hot before frying to prevent the fritters from absorbing too much oil.
- You can substitute milk with a plant-based alternative if you prefer a dairy-free option.
- Adding a pinch of chili powder can give the fritters a spicy kick for those who like heat.
- These fritters are best enjoyed fresh and warm for optimal texture and flavor.
- Leftovers can be reheated in a skillet or oven to maintain crispiness.
