  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1 cup lettuce leaves, separated

Dipping Sauce

Instructions

  1. Cook Rice Noodles: Prepare rice noodles according to package instructions by boiling until tender, then drain and set aside to cool.
  2. Prepare Vegetables: Julienne the carrots, cucumber, and red bell pepper into thin strips and slice the avocado; separate lettuce leaves and rinse fresh mint and cilantro.
  3. Soften Rice Paper Wrappers: Fill a large bowl with warm water. Dip one rice paper wrapper into the water for 10-15 seconds until it becomes soft but not mushy.
  4. Assemble Rolls: Lay the softened rice paper flat on a clean surface. Place a small amount of rice noodles, julienned vegetables, sliced avocado, herbs, and a piece of lettuce in the center of the wrapper.
  5. Roll Tightly: Fold the sides of the rice paper over the filling, then roll from the bottom up tightly to form a neat summer roll.
  6. Repeat: Continue soaking wrappers and assembling rolls until all ingredients are used.
  7. Serve: Arrange the summer rolls on a plate and serve immediately with peanut sauce for dipping.
