Scale
Soup Base
- 4 large onions, thinly sliced
- 2 tablespoons olive oil or vegan butter
- 1 teaspoon sugar
- 4 cups vegetable broth
- 1 cup dry white wine (optional)
- 1 teaspoon dried thyme
- Salt and pepper to taste
Toppings
- Baguette slices for topping
- Vegan or traditional shredded cheese
Instructions
- Prepare Onions: Add the thinly sliced onions, olive oil or vegan butter, and sugar into the crockpot. This mixture will slowly cook to develop rich caramelized flavors.
- Caramelize Onions: Cook on high for 4–5 hours or on low for 8–10 hours in the crockpot, stirring occasionally to ensure even cooking, until the onions are deeply caramelized and golden brown.
- Add Broth and Seasonings: Stir in the vegetable broth, optional white wine, dried thyme, salt, and pepper. Cover the crockpot and cook on low for an additional 1–2 hours to meld flavors.
- Preheat Broiler: When ready to serve, preheat your oven’s broiler to get it hot and ready for melting cheese.
- Assemble Bowls: Ladle the hot soup into oven-safe bowls. Place a slice of baguette on top of each bowl and generously sprinkle with vegan or traditional shredded cheese.
- Broil: Place the bowls under the broiler for 2–3 minutes, watching closely, until the cheese melts, bubbles, and turns slightly golden.
- Serve: Carefully remove from the oven and serve immediately while hot and bubbling for a delicious traditional French Onion Soup experience.
Notes
- If you prefer a non-alcoholic version, simply omit the white wine and add a bit more vegetable broth or a splash of apple cider vinegar for acidity.
- Use oven-safe bowls or ramekins to ensure safe broiling without damage.
- Leftover soup can be stored in the refrigerator for up to 3 days and reheated gently on the stove or microwave.
- For a richer flavor, use vegan butter instead of olive oil if desired.
- Adjust seasoning at the end of cooking to suit your taste preferences.
