Ingredients
Scale
Vegetables and Aromatics
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, diced
- 1 zucchini, diced
Canned Goods and Liquids
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups vegetable broth
Spices and Seasonings
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Heat the oil: In a large pot over medium heat, warm 1 tablespoon of olive oil until shimmering to prepare for sautéing the aromatics.
- Sauté onion and garlic: Add the chopped onion and minced garlic to the pot and cook, stirring occasionally, until they become soft and fragrant, about 3-5 minutes.
- Cook the vegetables: Stir in the chopped bell pepper, diced carrots, and diced zucchini. Continue cooking for 5 minutes to slightly soften the vegetables.
- Add tomatoes, beans, and broth: Pour in the diced tomatoes, drained kidney beans, black beans, and vegetable broth. Stir well to combine all the ingredients.
- Season the chili: Mix in the chili powder, cumin, and add salt and pepper to taste. Stir thoroughly to distribute the spices evenly.
- Simmer the chili: Bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for 30 minutes. This allows flavors to meld and the chili to thicken.
- Serve: Once cooked, ladle the chili into bowls and serve hot, optionally garnished with fresh herbs or vegan toppings of choice.
