Tofu & Vegetables

  • 1 block firm tofu, cubed
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced

Base & Seasonings

  • 1 can coconut milk (400ml)
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste


Instructions

  1. Heat Olive Oil: Heat 1 tablespoon of olive oil in a large pan over medium heat to prepare for sautéing.
  2. Sauté Onion and Garlic: Add the chopped onion and minced garlic to the pan and cook until they become translucent, releasing their fragrant aroma.
  3. Brown the Tofu: Add the cubed firm tofu to the pan and cook until it turns golden brown on all sides, giving it a nice texture.
  4. Add Vegetables: Stir in the broccoli florets, sliced bell peppers, and sliced carrots, mixing well with the tofu and aromatics.
  5. Add Curry Powder: Sprinkle in 2 tablespoons of curry powder and stir thoroughly so the spices coat the tofu and vegetables evenly.
  6. Pour Coconut Milk and Simmer: Pour in the 400ml can of coconut milk and bring the mixture to a gentle simmer to let the flavors meld together.
  7. Season: Add salt and pepper to taste, adjusting the seasoning according to preference.
  8. Cook until Vegetables are Tender: Let the curry cook for about 15 minutes over medium-low heat until the vegetables become tender yet retain a slight bite.
  9. Serve Warm: Once the curry is ready, serve it warm, either on its own or with your choice of rice or bread for a complete meal.
