Tofu & Vegetables
- 1 block firm tofu, cubed
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 1 cup carrots, sliced
Base & Seasonings
- 1 can coconut milk (400ml)
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- Heat Olive Oil: Heat 1 tablespoon of olive oil in a large pan over medium heat to prepare for sautéing.
- Sauté Onion and Garlic: Add the chopped onion and minced garlic to the pan and cook until they become translucent, releasing their fragrant aroma.
- Brown the Tofu: Add the cubed firm tofu to the pan and cook until it turns golden brown on all sides, giving it a nice texture.
- Add Vegetables: Stir in the broccoli florets, sliced bell peppers, and sliced carrots, mixing well with the tofu and aromatics.
- Add Curry Powder: Sprinkle in 2 tablespoons of curry powder and stir thoroughly so the spices coat the tofu and vegetables evenly.
