Description

A hearty and nutritious Sweet Potato Chili Casserole combining ground beef or turkey with sweet potatoes, black beans, corn, and a blend of spices. This comforting dish is baked with melted cheese on top and garnished with fresh cilantro, perfect for a warm family meal.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 large sweet potato, peeled and diced
  • 1 cup corn kernels (fresh, frozen, or canned and drained)

Canned Goods & Sauce

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 1/2 cups tomato sauce

Spices

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Additional

  • 1 cup shredded cheddar or Mexican blend cheese
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prepare for baking the casserole.
  2. Cook Meat and Aromatics: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion turns soft. Add minced garlic and cook for an additional minute. Drain excess fat to keep the dish from becoming greasy.
  3. Add Spices and Veggies: Stir in chili powder, cumin, smoked paprika, salt, and pepper to season. Add diced sweet potato, black beans, diced tomatoes, corn, and tomato sauce. Allow the mixture to simmer for 5-7 minutes until the sweet potatoes start to soften.
  4. Assemble Casserole: Transfer the cooked mixture into the prepared baking dish and spread evenly. Evenly distribute the shredded cheese over the top.
  5. Bake with Foil: Cover the dish with foil and bake for 25-30 minutes, or until the sweet potatoes are tender.
  6. Bake without Foil: Remove the foil and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
  7. Garnish and Serve: Sprinkle fresh chopped cilantro on top and serve warm for a delicious, comforting meal.

Notes

  • You can substitute ground turkey for ground beef for a leaner option.
  • Make sure to drain and rinse the black beans and corn well to avoid excess liquid in the casserole.
  • The dish can be prepared in advance and refrigerated before baking for convenience.
  • Feel free to add hotter chili powders or fresh jalapeños for extra heat.
  • Leftovers store well in an airtight container in the refrigerator for 3-4 days.
