Sweet Potato Mixture
- 2 cups cooked and mashed sweet potatoes (about 2 medium sweet potatoes)
- 1 cup packed brown sugar

- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon

Instructions
- Preheat and Prepare Sweet Potatoes: Preheat your oven to 350°F (175°C). Peel and chop the sweet potatoes into small pieces, then cook them in boiling water for about 15-20 minutes until tender. Drain and mash the sweet potatoes until smooth.
- Mix Wet Ingredients: In a large mixing bowl, combine the melted butter and brown sugar, stirring until well blended. Add eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract, then fold in the mashed sweet potatoes ensuring everything is well incorporated.
- Combine Dry Ingredients and Mix: In a separate bowl, whisk together the flour, cinnamon, nutmeg, and salt. Gradually add the dry mixture to the sweet potato mixture, stirring gently until just combined, being careful not to overmix.
- Prepare Baking Dish and Bake: Grease a 9×13-inch baking dish or line it with parchment paper. Pour the batter into the prepared dish, spreading evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the bars to cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before cutting into squares or rectangles for serving.
