Description

Delightfully moist and flavorful Sweet Potato Brown Sugar Bars made with mashed sweet potatoes, warm spices, and a touch of brown sugar. These bars are a perfect autumn treat, offering a soft texture and comforting spice notes baked to perfection in the oven.

Ingredients

Scale

Sweet Potato Mixture

  • 2 cups cooked and mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1 cup packed brown sugar
  • 1/2 cup (1 stick) butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat and Prepare Sweet Potatoes: Preheat your oven to 350°F (175°C). Peel and chop the sweet potatoes into small pieces, then cook them in boiling water for about 15-20 minutes until tender. Drain and mash the sweet potatoes until smooth.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the melted butter and brown sugar, stirring until well blended. Add eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract, then fold in the mashed sweet potatoes ensuring everything is well incorporated.
  3. Combine Dry Ingredients and Mix: In a separate bowl, whisk together the flour, cinnamon, nutmeg, and salt. Gradually add the dry mixture to the sweet potato mixture, stirring gently until just combined, being careful not to overmix.
  4. Prepare Baking Dish and Bake: Grease a 9×13-inch baking dish or line it with parchment paper. Pour the batter into the prepared dish, spreading evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool and Serve: Allow the bars to cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before cutting into squares or rectangles for serving.

Notes

  • Make sure not to overmix the batter after adding the dry ingredients to keep the bars tender.
  • Peeling the sweet potatoes is recommended for the smoothest texture, but you can leave the skins on if you prefer more texture and fiber.
  • For an extra touch, sprinkle chopped nuts like pecans or walnuts on top before baking.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • These bars can be warmed slightly before serving for a softer, just-baked feel.
