  • 1 1/2 pounds ground beef
  • 1/2 pound ground pork
  • 1 cup panko breadcrumbs
  • 2 large eggs

  • 2 tablespoons gochujang
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

  • 1/4 cup ketchup
  • 2 tablespoons gochujang
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar


Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet to prevent sticking.
  2. Combine ingredients for meatloaf: In a large mixing bowl, add ground beef, ground pork, panko breadcrumbs, eggs, milk, finely chopped onion, minced garlic, gochujang, soy sauce, sesame oil, brown sugar, grated ginger, black pepper, chopped green onions, and sesame seeds. Mix gently with your hands or a spoon until just combined, being careful not to overmix to keep the meatloaf tender.
  3. Shape and place the meatloaf: Form the mixture into a loaf shape and place it into the prepared loaf pan or on the baking sheet.
  4. Make the glaze: In a small bowl, whisk together ketchup, gochujang, soy sauce, honey, and rice vinegar until smooth and well combined.
