Description

Phyllo Shells

  • 1 package frozen phyllo shells (15 count)

Filling

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup ricotta cheese
  • 1 large egg, beaten
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) and allow it to fully preheat to ensure even baking.
  2. Sauté aromatics: Heat olive oil in a skillet over medium heat. Add the finely chopped onion and cook for 3 to 4 minutes until it softens and becomes translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Cook the spinach: Add the chopped fresh spinach to the skillet and cook until it wilts and most of the moisture evaporates, stirring frequently. Remove the skillet from heat and let the spinach mixture cool slightly.
  4. Prepare filling: In a mixing bowl, combine the cooled spinach mixture with crumbled feta, ricotta cheese, beaten egg, chopped dill, lemon juice, salt, and black pepper. Mix well until evenly incorporated.
  5. Fill the phyllo shells: Spoon the prepared filling evenly into each frozen phyllo shell and place them on a baking sheet in a single layer.
