  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon sugar
  • 20 g freshly grated parmesan
  • 200 g spaghetti

Bread Bowls and Topping

  • 6 crusty white rolls
  • 100 g butter, melted
  • 30 g parmesan for butter (optional)
  • 1 tablespoon fresh parsley, finely chopped
  • 3 cloves garlic, made into paste
  • 200 g mozzarella, shredded


Instructions

  1. Sauté Aromatics and Meat: Heat olive oil in a pan and sauté the diced onion until golden brown. Add the minced garlic, then the ground beef, cooking it thoroughly until browned and fragrant.
  2. Prepare the Sauce: Stir in tomato puree and red wine, allowing the mixture to reduce slightly. Add tomato passata, beef stock, Worcestershire sauce, chopped basil, oregano, and sugar. Simmer on low heat for 25 minutes, stirring occasionally, until the sauce thickens.
  3. Prepare Bread Bowls: Cut the tops off the crusty rolls and hollow out the centers carefully, reserving the breadcrumbs for another use.
  4. Make Garlic Butter and Brush Bowls: Combine melted butter with garlic paste, finely chopped parsley, and optional parmesan. Brush this mixture generously on the inside and outside of each hollowed bread bowl.
  5. Cook Spaghetti: Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Drain and mix the pasta into the prepared meat sauce, ensuring the spaghetti is thoroughly coated.
  6. Assemble Bowls: Spoon the sauced spaghetti evenly into the prepared bread bowls. Add some extra sauce on top for moisture and flavor, then sprinkle shredded mozzarella over each bowl.
