Description

Smashed Carrots are a delicious and simple side dish combining tender boiled carrots with a crispy roasted finish. Coated in olive oil and seasoned with garlic powder, sea salt, and pepper, then roasted to golden perfection, this recipe is both healthy and flavorful. Garnished with fresh herbs like parsley or thyme, it makes a perfect accompaniment to any meal.

Ingredients

Scale

Carrots

  • 1 lb carrots (about 4-5 medium-sized)

Seasonings

  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • ½ tsp sea salt
  • ¼ tsp freshly cracked black pepper

Garnish

  • Fresh herbs (parsley or thyme) for garnish

Instructions

  1. Prepare the Carrots: Wash, peel, and cut the carrots into 3-inch pieces to ensure even cooking and easy smashing.
  2. Boil the Carrots: Place the cut carrots in a pot of salted water and boil for about 15 minutes, or until they are fork-tender and easily pierced.
  3. Drain and Smash: Drain the cooked carrots well and arrange them on a parchment-lined baking sheet. Using a fork or potato masher, gently smash each carrot piece to flatten slightly.
  4. Season the Carrots: Drizzle the smashed carrots evenly with extra virgin olive oil. Sprinkle garlic powder, sea salt, and freshly cracked black pepper over them, then toss gently to coat all pieces thoroughly.
  5. Roast the Carrots: Preheat the oven to 425°F (220°C). Roast the seasoned carrots for 20-25 minutes until they develop a golden brown, crispy texture. Flip the carrots halfway through roasting to ensure even browning.
  6. Garnish and Serve: Remove the carrots from the oven and sprinkle fresh herbs such as parsley or thyme on top. Serve warm as a flavorful and healthy side dish.

Notes

  • Make sure to use fresh carrots for the best flavor and texture.
  • Smashing the carrots allows more surface area to crisp up in the oven.
  • Feel free to experiment with other herbs like rosemary or chives for garnish.
  • You can substitute garlic powder with fresh minced garlic, but add it after roasting to prevent burning.
  • This dish pairs well with roasted meats, grilled chicken, or as part of a vegetarian meal.
