Description

Roasted Carrots with Maple Tahini Drizzle is a delicious and healthy side dish featuring tender, caramelized carrots enhanced with a creamy, slightly sweet tahini sauce. This recipe combines the natural sweetness of roasted carrots with a nutty and tangy maple tahini drizzle, making it perfect to complement any meal.

Ingredients

Scale

Carrots

  • 1 lb (about 450 grams) fresh carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Maple Tahini Drizzle

  • 3 tablespoons tahini
  • 2 tablespoons maple syrup
  • 1 tablespoon freshly squeezed lemon juice
  • 1 clove garlic, minced
  • A pinch of salt
  • Water, to adjust consistency if needed

Garnish

  • Fresh parsley (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the carrots.
  2. Prepare Carrots: Peel the fresh carrots and cut them into sticks about half an inch thick to ensure even cooking.
  3. Season Carrots: In a large bowl, toss the carrot sticks with olive oil, salt, and black pepper until they are evenly coated.
  4. Roast Carrots: Spread the seasoned carrots in a single layer on a parchment-lined baking sheet. Roast in the oven for 25-30 minutes, stirring halfway through to promote even caramelization.
  5. Make Maple Tahini Drizzle: While the carrots roast, whisk together tahini, maple syrup, lemon juice, minced garlic, and a pinch of salt in a small bowl. Add water a little at a time to reach a smooth, drizzle-able consistency.
  6. Serve: Once the carrots are tender and caramelized, transfer them to a serving platter. Drizzle the maple tahini sauce over the top and garnish with fresh parsley if desired.

Notes

  • Adjust the consistency of the maple tahini drizzle with water to your preference.
  • For an extra flavor boost, sprinkle some smoked paprika or cumin on the carrots before roasting.
  • Use fresh garlic for the best flavor in the drizzle, but garlic powder can be substituted in a pinch.
  • This dish pairs well with grilled chicken, fish, or as a standalone vegetarian side.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
