Ingredients
Scale
Asparagus
- 1 bunch asparagus, trimmed
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shaved parmesan
Tomato Mixture
- 1 pint cherry tomatoes, halved or quartered
- 2-3 garlic cloves, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
Garnish
- 7 large basil leaves, sliced thin
- Balsamic reduction, store-bought or homemade
Instructions
- Preheat Oven: Preheat the oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper to prevent sticking and make cleanup easy.
- Prepare Tomatoes: In a bowl, toss together the halved or quartered cherry tomatoes with the minced garlic and 1 teaspoon of olive oil. Season with salt and pepper to taste, then set aside to allow flavors to marinate.
- Prep Asparagus: Snap off the woody ends of the asparagus stalks and place them in a separate bowl. Drizzle with 1 tablespoon olive oil, then sprinkle with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Toss well to coat evenly. Arrange the asparagus in a single layer on the prepared baking sheet.
- Add Toppings: Sprinkle the shaved parmesan evenly over the asparagus. Then, spoon the tomato and garlic mixture evenly on top of the asparagus and parmesan layer.
- Roast: Place the baking sheet in the preheated oven and roast for 12-15 minutes, or until the asparagus is tender and lightly caramelized and the tomatoes are softened.
- Final Touches: Remove from oven and sprinkle the thinly sliced basil leaves over the top. Drizzle with balsamic reduction to add a tangy sweetness. Serve immediately while hot.
Notes
- You can make your own balsamic reduction by simmering balsamic vinegar until it thickens and reduces by half.
- For a nuttier flavor, try adding toasted pine nuts on top before serving.
- Make sure the asparagus is arranged in a single layer for even roasting.
- Use fresh parmesan for the best flavor; shaved parmesan melts nicely during roasting.
- This dish pairs well with grilled chicken or fish for a complete meal.
