Description

A delightful and creamy Parmesan Orzo with Shrimp recipe combining tender orzo pasta with succulent shrimp, garlic, white wine, and fresh lemon for a bright, flavorful dish perfect for a quick and elegant meal.

Ingredients

Scale

Orzo and Shrimp

  • 1 cup orzo pasta
  • 2 tablespoons olive oil, divided
  • 1 pound large shrimp, peeled and deveined
  • Salt and freshly ground black pepper, to taste

Sauce and Flavorings

  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine
  • 1 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon unsalted butter
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • Zest of 1 lemon
  • 2 tablespoons chopped fresh parsley leaves

Instructions

  1. Cook Orzo: Begin by cooking the orzo according to package instructions until al dente. Drain and set aside.
  2. Heat Olive Oil: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  3. Cook Shrimp: Season the shrimp with salt and pepper. Add shrimp to the skillet and cook for about 2-3 minutes on each side, or until pink and opaque. Remove shrimp from the skillet and set aside.
  4. Sauté Garlic: Reduce heat to medium and add the remaining 1 tablespoon of olive oil to the same skillet. Add minced garlic and red pepper flakes if using. Sauté for about 1-2 minutes until fragrant.
  5. Simmer Wine: Carefully pour in the white wine. Let it simmer for about 2-3 minutes to reduce slightly.
  6. Add Broth and Combine: Stir in the chicken broth and bring to a boil. Add cooked orzo, Parmesan cheese, butter, lemon juice, and lemon zest. Stir until butter is melted and the mixture is creamy.
  7. Combine Shrimp: Return the cooked shrimp to the skillet and gently toss to combine. Cook for another 1-2 minutes until everything is heated through.
  8. Garnish and Serve: Garnish the dish with freshly chopped parsley before serving.

Notes

  • For a spicier dish, keep the red pepper flakes.
  • Use fresh lemon juice and zest for the best citrus flavor.
  • Ensure the shrimp is fully cooked but not overdone to maintain tenderness.
  • Substitute chicken broth with vegetable broth to make it pescatarian friendly.
  • Serve immediately for the creamiest texture.
