Orzo and Shrimp
- 1 cup orzo pasta

- 1/2 cup dry white wine
- 1 cup chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon unsalted butter
- 2 tablespoons fresh lemon juice (about 1 lemon)
- Zest of 1 lemon
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Cook Orzo: Begin by cooking the orzo according to package instructions until al dente. Drain and set aside.
- Heat Olive Oil: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Cook Shrimp: Season the shrimp with salt and pepper. Add shrimp to the skillet and cook for about 2-3 minutes on each side, or until pink and opaque. Remove shrimp from the skillet and set aside.
- Sauté Garlic: Reduce heat to medium and add the remaining 1 tablespoon of olive oil to the same skillet. Add minced garlic and red pepper flakes if using. Sauté for about 1-2 minutes until fragrant.

- Add Broth and Combine: Stir in the chicken broth and bring to a boil. Add cooked orzo, Parmesan cheese, butter, lemon juice, and lemon zest. Stir until butter is melted and the mixture is creamy.
- Combine Shrimp: Return the cooked shrimp to the skillet and gently toss to combine. Cook for another 1-2 minutes until everything is heated through.
- Garnish and Serve: Garnish the dish with freshly chopped parsley before serving.
