This Orange Honey Date Cake with Almond Topping is a moist and flavorful dessert combining the natural sweetness of dates and honey with zesty orange and a crunchy almond topping. Perfect for a special occasion or a delightful afternoon treat, this cake offers a lovely balance of fruity and nutty flavors with a tender crumb.

Ingredients

Scale

Date Soaking

  • 1 cup (180g) pitted dates, chopped
  • 1/2 cup (120ml) boiling water
  • 1 tsp baking soda

Cake Batter

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 large orange
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (60g) almond flour
  • 1 tsp baking powder
  • Pinch of salt

Topping and Glaze

  • 1/3 cup (80ml) honey
  • 2 tbsp fresh orange juice
  • 1/2 cup (60g) sliced almonds
  • 1 tbsp sugar
  • 1 tbsp butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the optimal temperature for baking the cake.
  2. Prepare Pan and Soak Dates: Grease and line a round cake pan with parchment paper. In a small bowl, soak the chopped dates in boiling water mixed with baking soda for 10 minutes to soften them.
  3. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and brown sugar until the mixture is fluffy and light in color. This step creates the base for a tender cake.
  4. Add Eggs and Flavor: Beat in the eggs one at a time to fully incorporate them, then add vanilla extract and the zest of one large orange. Fold the softened soaked dates gently into this wet mixture.
  5. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and pinch of salt until evenly mixed.
  6. Mix Batter: Gently fold the dry ingredient mixture into the wet ingredients until just combined, taking care not to overmix to keep the cake tender.
  7. Prepare Topping and Bake: Pour the batter evenly into the prepared cake pan. In a small pan, melt butter and stir in sugar and sliced almonds. Sprinkle this almond topping evenly over the batter. Bake the cake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Glaze: Allow the cake to cool for 10 minutes in the pan before transferring it to a wire rack to cool slightly. Drizzle a mixture of honey and fresh orange juice over the warm cake to add a glossy, flavorful finish before serving.

Notes

  • Make sure to soak the dates in boiling water with baking soda to soften them and enhance their sweetness.
  • Do not overmix the batter once the dry ingredients are added to avoid a dense cake.
  • If you don’t have almond flour, finely ground almonds can be used as a substitute.
  • The honey and orange juice glaze adds moisture and a bright flavor, so be sure to drizzle it while the cake is still warm.
  • Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
