Ingredients
Scale
Date Soaking
- 1 cup (180g) pitted dates, chopped
- 1/2 cup (120ml) boiling water
- 1 tsp baking soda
Cake Batter
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 1 large orange
- 1 cup (120g) all-purpose flour
- 1/2 cup (60g) almond flour
- 1 tsp baking powder
- Pinch of salt
Topping and Glaze
- 1/3 cup (80ml) honey
- 2 tbsp fresh orange juice
- 1/2 cup (60g) sliced almonds
- 1 tbsp sugar
- 1 tbsp butter
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the optimal temperature for baking the cake.
- Prepare Pan and Soak Dates: Grease and line a round cake pan with parchment paper. In a small bowl, soak the chopped dates in boiling water mixed with baking soda for 10 minutes to soften them.
- Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and brown sugar until the mixture is fluffy and light in color. This step creates the base for a tender cake.
- Add Eggs and Flavor: Beat in the eggs one at a time to fully incorporate them, then add vanilla extract and the zest of one large orange. Fold the softened soaked dates gently into this wet mixture.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and pinch of salt until evenly mixed.
- Mix Batter: Gently fold the dry ingredient mixture into the wet ingredients until just combined, taking care not to overmix to keep the cake tender.
- Prepare Topping and Bake: Pour the batter evenly into the prepared cake pan. In a small pan, melt butter and stir in sugar and sliced almonds. Sprinkle this almond topping evenly over the batter. Bake the cake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Glaze: Allow the cake to cool for 10 minutes in the pan before transferring it to a wire rack to cool slightly. Drizzle a mixture of honey and fresh orange juice over the warm cake to add a glossy, flavorful finish before serving.
Notes
- Make sure to soak the dates in boiling water with baking soda to soften them and enhance their sweetness.
- Do not overmix the batter once the dry ingredients are added to avoid a dense cake.
- If you don’t have almond flour, finely ground almonds can be used as a substitute.
- The honey and orange juice glaze adds moisture and a bright flavor, so be sure to drizzle it while the cake is still warm.
- Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
