Lemon Orzo

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced


Instructions

  1. Heat the oil: Heat 2 tablespoons of olive oil in a skillet over medium heat until shimmering.
  2. Sauté garlic: Add 2 cloves of minced garlic to the skillet and sauté for about 1 minute until fragrant but not browned.
  3. Toast orzo: Add 1 cup of orzo pasta to the skillet and stir, toasting it for 1-2 minutes to enhance its nutty flavor.
  4. Add broth and cook orzo: Pour in 2 cups of vegetable broth and bring the mixture to a boil. Reduce heat to a simmer and cook the orzo for about 10 minutes until tender and the liquid has mostly absorbed.
