Description

This One-Pot Creamy Taco Pasta is a flavorful and comforting dish combining the zest of taco seasoning with creamy cheese sauce, tender ground beef, and perfectly cooked pasta. Ready in just 30 minutes, it’s an easy and hearty meal perfect for busy weeknights.

Ingredients

Scale

Protein and Vegetables

  • 1 lb ground beef
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers

Dry Goods & Spices

  • 8 oz pasta
  • 1 taco seasoning packet
  • Salt and pepper to taste

Canned and Dairy

  • 1 can diced tomatoes (about 14.5 oz)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Mexican blend recommended)

Instructions

  1. Brown the Ground Beef with Vegetables: In a large pot over medium heat, cook the ground beef along with chopped onions and bell peppers until the beef is fully browned and the vegetables are softened, about 5-7 minutes.
  2. Add Taco Seasoning: Sprinkle the taco seasoning packet over the beef mixture. Stir thoroughly to evenly coat the beef and vegetables with the seasoning.
  3. Incorporate Tomatoes and Broth: Pour in the diced tomatoes (with their juices) and chicken broth. Stir to combine all ingredients evenly.
  4. Add Pasta and Boil: Add the dry pasta to the pot and increase the heat to bring the mixture to a rolling boil.
  5. Simmer Pasta Until Cooked: Reduce heat to medium-low and cover the pot. Let it simmer for about 10-12 minutes or until the pasta is tender, stirring occasionally to prevent sticking.
  6. Finish with Cream and Cheese: Stir in the heavy cream and shredded cheese. Continue to stir until the cheese is fully melted and the sauce becomes creamy.
  7. Season and Serve: Taste the pasta sauce and season with salt and pepper as needed. Serve hot immediately for the best texture and flavor.

Notes

  • You can substitute ground turkey or chicken for a leaner protein option.
  • Use gluten-free pasta if gluten sensitivity is a concern.
  • Add jalapeños or hot sauce for an extra spicy kick.
  • Leftovers reheat well and can be stored in the refrigerator for up to 3 days.
  • Cheese options like mozzarella or pepper jack work well, too.
