- 1 bell pepper, diced
- 1 zucchini, sliced

- 1 package gnocchi (16 oz)
- 2 tablespoons olive oil
- 1 cup water
Instructions
- Heat Olive Oil: Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
- Sauté Vegetables: Add the halved cherry tomatoes, diced bell pepper, and sliced zucchini to the skillet. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are softened but still vibrant.
- Add Garlic and Seasoning: Stir in the minced garlic and 1 teaspoon of Italian seasoning. Cook for about 1 minute until fragrant, making sure the garlic doesn’t brown.
- Add Gnocchi and Water: Pour in the package of gnocchi along with 1 cup of water. Stir well to combine the gnocchi with the vegetables and seasoning.
- Cook Covered: Cover the skillet with a lid and cook for 5 to 8 minutes, allowing the gnocchi to absorb the water and become tender. Stir once or twice during cooking to prevent sticking.
- Season and Stir: Remove the lid, season the dish with salt and pepper to your taste, and give it a good stir to combine all flavors evenly.
- Garnish and Serve: Transfer to serving plates and garnish with fresh basil leaves before serving warm.

- Use fresh gnocchi for best texture and flavor. Frozen gnocchi may take longer to cook.
- Adjust the amount of water if the gnocchi absorbs it too quickly or looks dry.
