Instructions

  1. Heat Olive Oil: Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Sauté Vegetables: Add the halved cherry tomatoes, diced bell pepper, and sliced zucchini to the skillet. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are softened but still vibrant.
  3. Add Garlic and Seasoning: Stir in the minced garlic and 1 teaspoon of Italian seasoning. Cook for about 1 minute until fragrant, making sure the garlic doesn’t brown.
  4. Add Gnocchi and Water: Pour in the package of gnocchi along with 1 cup of water. Stir well to combine the gnocchi with the vegetables and seasoning.
  5. Cook Covered: Cover the skillet with a lid and cook for 5 to 8 minutes, allowing the gnocchi to absorb the water and become tender. Stir once or twice during cooking to prevent sticking.
