Ingredients
Scale
Protein & Seasoning
- 1 pound ground chicken
- 1 tablespoon Nashville hot chicken seasoning
Vegetables & Aromatics
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
Beans
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
Liquids & Oil
- 2 cups chicken broth
- 1 tablespoon olive oil
Seasonings
- Salt and pepper to taste
Instructions
- Heat the oil: Warm 1 tablespoon of olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
- Sauté the aromatics: Add the diced onion and minced garlic to the pot and cook, stirring occasionally, until they are softened and fragrant, about 3-5 minutes.
- Cook the chicken: Add the ground chicken to the pot and cook until it is browned evenly, breaking up the meat as it cooks to ensure it’s fully cooked through.
- Add the seasoning: Stir in the 1 tablespoon of Nashville hot chicken seasoning to infuse the meat and vegetables with spicy heat and smoky flavors.
- Add remaining ingredients: Pour in the diced tomatoes, drained kidney beans, drained black beans, and 2 cups of chicken broth. Stir well to combine all ingredients.
- Simmer the chili: Bring the mixture to a simmer, then reduce heat to maintain a gentle simmer. Cook uncovered for 20 minutes to allow flavors to meld and the chili to thicken slightly.
- Season to taste: Finally, season the chili with salt and pepper according to your preference before serving.
Notes
- You can adjust the amount of Nashville hot chicken seasoning to vary the heat level according to your taste.
- For a thicker chili, simmer uncovered longer to reduce the liquid.
- This chili pairs well with cornbread or over rice for a hearty meal.
- Leftovers store well and can be reheated on the stovetop or in the microwave.
