Ingredients
Scale
Rice and Broth
- 1 cup wild rice
- 2 cups vegetable broth
Vegetables and Seasoning
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Rinse Wild Rice: Rinse the wild rice thoroughly under cold water to remove any impurities and excess starch.
- Heat Olive Oil: In a medium saucepan, warm the olive oil over medium heat until shimmering.
- Sauté Onion and Garlic: Add the chopped onion and minced garlic to the pan, cooking and stirring occasionally until the onion turns translucent and fragrant, about 3-4 minutes.
- Cook Mushrooms: Add the sliced mushrooms to the pan and sauté until they are tender and have released their moisture, approximately 5 minutes.
- Add Rice and Broth: Stir in the rinsed wild rice and pour in the vegetable broth. Bring the mixture to a rolling boil over medium-high heat.
- Simmer the Pilaf: Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer gently for 45 minutes, or until the rice is tender and has absorbed most of the liquid.
- Season and Fluff: Remove the lid and fluff the pilaf with a fork. Season with salt and freshly ground pepper to taste.
- Garnish and Serve: Sprinkle chopped fresh parsley over the top before serving for a fresh and colorful finish.
Notes
- Rinsing the wild rice helps to improve the texture and remove any dust or grit.
- Use a heavy-bottomed saucepan to prevent the rice from sticking or burning.
- If the rice isn’t fully cooked after 45 minutes, add a little more broth or water and continue simmering until tender.
- This pilaf pairs well with grilled meats, roasted vegetables, or can be enjoyed as a standalone vegetarian dish.
- For extra flavor, consider adding a splash of white wine when sautéing the mushrooms.
