This Mongolian Ground Beef Noodles recipe combines savory ground beef with tender noodles in a deliciously sweet and tangy soy sauce-based glaze. Infused with garlic, ginger, and a hint of red pepper flakes for warmth, this quick and easy meal is garnished with fresh green onions and sesame seeds for added flavor and texture. Ready in just 25 minutes, it’s perfect for a satisfying weeknight dinner that brings a taste of Asian-inspired comfort food to your table.

Ingredients

Scale

Beef and Noodles

  • 1 lb ground beef
  • 8 oz noodles (such as lo mein or spaghetti)

Sauce and Seasoning

  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/4 tsp red pepper flakes

Garnish and Oil

  • 2 green onions, chopped
  • 1 tbsp vegetable oil
  • Sesame seeds, for garnish

Instructions

  1. Cook the noodles: Bring a pot of salted water to a boil and cook the noodles according to package directions until al dente. Drain and set aside.
  2. Prepare the sauce mixture: In a small bowl, combine soy sauce, brown sugar, minced garlic, minced ginger, and red pepper flakes. Stir well until the sugar dissolves.
  3. Cook the ground beef: Heat the vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked, about 6-8 minutes. Drain excess fat if necessary.
  4. Add the sauce to the beef: Pour the prepared sauce mixture over the cooked ground beef in the skillet. Stir well to coat the beef evenly. Allow the mixture to simmer for 2-3 minutes to thicken slightly.
  5. Combine noodles and beef sauce: Add the drained noodles to the skillet with the beef and sauce. Toss everything together until the noodles are well coated and heated through, about 2 minutes.
  6. Garnish and serve: Remove from heat and sprinkle with chopped green onions and sesame seeds. Serve immediately while hot.

Notes

  • You can use any type of noodles you prefer, such as lo mein, spaghetti, or ramen noodles.
  • Adjust red pepper flakes to your preferred level of spiciness or omit for a milder dish.
  • For extra vegetables, stir fry sliced bell peppers or snap peas and add them in with the beef.
  • Leftovers keep well in the refrigerator for up to 3 days and can be reheated in the microwave or on the stovetop.
