Description

These Mini Egg Bites are a delicious and versatile breakfast or snack option, featuring a fluffy egg base combined with your favorite fillings and topped with melted cheddar cheese. Baked to golden perfection in muffin tins, they are easy to make ahead and perfect for meal prep or quick mornings.

Ingredients

Scale

Egg Mixture

  • 10 large eggs
  • ¼ cup shredded cheddar cheese
  • 2 tablespoons milk
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Optional Fillings (use your favorites)

  • Spinach, chopped
  • Green onion, sliced
  • Green bell pepper, seeded and chopped
  • Red bell pepper, seeded and chopped
  • Ham, diced
  • Tomato, diced

Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Grease a silicone muffin tin or line a regular muffin tin with paper liners to prevent sticking.
  2. Whisk Eggs: In a large bowl, thoroughly whisk together the eggs, milk, salt, and black pepper until the mixture is smooth and well combined.
  3. Fill Muffin Cups: Pour the egg mixture into each muffin cup, filling about one-third full to start.
  4. Add Fillings: Add about 1 teaspoon of each desired filling (such as chopped spinach, sliced green onions, diced bell peppers, ham, or tomato) into each muffin cup. Then, fill the cups to about two-thirds full with the remaining egg mixture, ensuring the fillings are evenly distributed.
  5. Top with Cheese: Sprinkle approximately 1 teaspoon of shredded cheddar cheese over the top of each muffin cup for a melty, golden topping.
  6. Bake: Place the muffin tin in the preheated oven and bake for 30 to 40 minutes, or until the egg bites are fully set and the tops turn lightly golden brown. To test doneness, insert a toothpick into the center of an egg bite – it should come out clean.
  7. Cool and Serve: Remove the muffin tin from the oven and allow the mini egg bites to cool slightly before removing from the tin. Serve warm as a nutritious breakfast or snack.

Notes

  • You can customize the fillings based on your preference or dietary needs.
  • Use silicone muffin tins for easy removal without greasing if preferred.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • These egg bites can be reheated in the microwave for about 20-30 seconds before serving.
  • For a dairy-free version, omit the cheese or use a vegan alternative.
