Ingredients
Scale
Meat and Seasoning
- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
- 1/2 cup water
Base & Sauces
- 6 medium-size flour tortillas
- 1 can (16 ounces) refried beans
- 1 can (10 ounces) red enchilada sauce
Cheeses
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
Toppings
- 1 Roma tomato, diced
- 1 green onion, diced
- 1 small can sliced black olives
Instructions
- Preheat and crisp tortillas: Preheat your oven to 375°F. Spray two baking sheets with non-stick spray and place 3 tortillas on each. Bake for 3 to 5 minutes, then carefully flip the tortillas while still in the oven to avoid burns. Bake an additional 2 to 5 minutes until the tortillas are lightly golden and crisp. Remove and set aside.
- Cook the seasoned beef: While tortillas are baking, heat a large skillet over medium-high heat and cook the ground beef until fully browned and crumbled. Drain excess grease. Add the taco seasoning and water, bring to a boil, then reduce to medium-low and simmer, stirring occasionally, for 10 minutes. Remove from heat.
- Assemble the Mexican pizzas: Warm the refried beans in a microwave-safe bowl until heated through. Spread a thin layer of refried beans on one tortilla. Top with one-third of the cooked meat mixture, then place another tortilla on top. Spread 3 tablespoons of enchilada sauce onto the top tortilla. Sprinkle evenly with cheddar and pepper-jack cheeses, then add diced tomato, green onion, and black olives.
- Repeat assembly: Repeat the layering process for the remaining tortillas and ingredients to create a total of 3 Mexican pizzas.
- Bake to melt cheese: Place the assembled pizzas on baking sheets and bake in the preheated oven for about 5 minutes, or until the cheese is melted and bubbly. Remove from oven and let cool slightly before slicing and serving. Enjoy!
Notes
- Handle hot tortillas carefully when flipping to avoid burns.
- You can customize toppings according to personal preference—for example, jalapeños or avocado slices.
- Using lean ground beef reduces grease and creates a less oily pizza.
- If you prefer a spicier taste, add extra taco seasoning or hot sauce.
- For a vegetarian version, substitute the beef with seasoned beans or a plant-based meat alternative.
