Ingredients
Scale
Sweet Potatoes
- 2 pounds sweet potatoes, peeled and cut into 1-inch thick rounds
Seasoning and Sauce
- 4 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken or vegetable broth
Garnish
- Fresh parsley or thyme for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Season the Sweet Potatoes: In a large bowl, toss the peeled and sliced sweet potato rounds with melted butter, olive oil, brown sugar, ground cinnamon, garlic powder, salt, and black pepper until each piece is evenly coated with the flavorful mixture.
- Roast the Sweet Potatoes: Arrange the coated sweet potato rounds in a single layer on the prepared baking sheet. Place them in the oven and roast for 20 minutes, allowing them to cook and start caramelizing.
- Flip and Add Broth: After initial roasting, carefully flip the sweet potato slices to ensure even cooking on both sides. Pour the chicken or vegetable broth evenly over the sweet potatoes. Return the baking sheet to the oven and continue roasting for an additional 20 to 25 minutes until the sweet potatoes are tender and caramelized to perfection.
- Serve: Once cooked, transfer the roasted sweet potatoes to a serving platter. Garnish with fresh parsley or thyme for a pop of color and fresh flavor. Serve warm as a comforting and flavorful side dish.
Notes
- You can substitute chicken broth with vegetable broth to make this recipe vegetarian.
- Adjust the brown sugar quantity to reduce sweetness or increase caramelization as preferred.
- Ensure sweet potato slices are approximately 1-inch thick for even cooking.
- Use parchment paper or a silicone baking mat to prevent sticking and ease cleanup.
- Leftovers can be refrigerated for up to 3 days and gently reheated in the oven to maintain texture.
