Ingredients
Scale
Crust
- 2 cups graham cracker crumbs
- 1/2 cup finely chopped pistachios
- 6 tablespoons melted butter
Cheesecake Filling
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh lime juice
- 1 tablespoon lemon zest
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- 1/2 cup chopped maraschino cherries
- 1/4 cup cherry syrup
Topping
- 1/2 cup chopped pistachios for topping
- Whipped cream for garnish (if desired)
Instructions
- Prepare the crust: Preheat the oven to 325°F. In a medium bowl, combine graham cracker crumbs, finely chopped pistachios, and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then allow it to cool slightly.
- Make the filling: In a large mixing bowl, beat softened cream cheese and granulated sugar together until smooth and creamy. Add the eggs one at a time, mixing on low speed after each addition to incorporate fully without overbeating.
- Add flavorings and mix-ins: Blend in sour cream, fresh lemon juice, fresh lime juice, lemon zest, lime zest, and vanilla extract until combined. Gently fold in the chopped maraschino cherries along with the cherry syrup, taking care not to overmix.
- Assemble and bake: Pour the cheesecake filling over the prepared crust and smooth the surface evenly. Bake for 50 to 55 minutes or until the center is slightly set but still has a slight wobble.
- Cool gradually: Turn off the oven and crack the oven door open. Leave the cheesecake inside for 1 hour to cool gradually, which helps prevent cracking.
- Chill: Remove the cheesecake from the oven and cool completely at room temperature. Then refrigerate for at least 4 hours or preferably overnight to allow the flavors to develop and the texture to set fully.
- Add toppings and serve: Before serving, garnish the cheesecake with chopped pistachios and whipped cream if desired. Slice and enjoy the luscious citrus and cherry flavors with every bite.
Notes
- Allow the cheesecake to come to room temperature for about 15 minutes before slicing to achieve the best texture.
- For added depth of flavor and crunch, toast the pistachios before incorporating them into the crust and as a topping.
