Ingredients
Scale
Brownies
- 1 cup salted butter (melted)
- 1/2 cup unsweetened cocoa powder
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 4 large eggs
- 4 teaspoons vanilla extract
Chocolate Frosting
- 1/4 cup salted butter (softened)
- 1/4 cup unsweetened cocoa powder
- 1/4 cup milk (2%)
- 3 cups powdered sugar
- 1 cup salted butter (melted) (appears repeated in ingredients, but this quantity is part of the batter)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper to prevent sticking and make it easy to remove the brownies.
- Prepare Brownie Batter: In a large bowl, combine the melted butter and 1/2 cup of unsweetened cocoa powder. Use an electric hand mixer to blend them together until smooth and uniform in texture.
- Add Dry Ingredients and Eggs: Add the 2 cups of all-purpose flour and 2 cups of granulated sugar to the cocoa-butter mixture. Beat them together to combine well. Then, add the 4 large eggs and 4 teaspoons of vanilla extract. Mix gently until the batter is just combined; do not overmix as the batter will be thick.
- Bake the Brownies: Pour the thick batter evenly into the prepared baking dish, spreading it out to the edges. Bake in the preheated oven for 25 to 28 minutes, or until a toothpick inserted into the center comes out mostly clean, with a few moist crumbs. Once baked, remove from oven and let the brownies stand for about 15 minutes to warm slightly before frosting.
- Make the Chocolate Frosting: In a mixing bowl, beat together the softened butter, unsweetened cocoa powder, milk, and powdered sugar until the frosting is smooth and creamy with no lumps.
- Frost the Brownies: Spread the chocolate frosting evenly over the slightly warm brownies. This allows the frosting to set beautifully as the brownies cool.
- Cool and Serve: Allow the frosted brownies to cool completely before cutting them into squares. Serve and enjoy your delicious, classic Lunch Lady Brownies!
Notes
- Do not overmix the batter to keep the brownies fudgy and tender.
- Using parchment paper helps with easy removal of brownies from the pan.
- Letting the brownies cool completely before cutting prevents the frosting from smudging.
- You can substitute 2% milk with whole milk or plant-based milk for frosting.
- Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for a longer shelf life.
