Instructions

  1. Prepare the mixture: Line a small baking sheet with parchment paper. Place the salmon chunks, almond flour, minced parsley, salt, pepper, green onions, egg, and lemon zest into a food processor.
  2. Pulse the ingredients: Pulse several times until the salmon is mixed but still chunky. Avoid over-processing to prevent turning the mixture into a paste; it should remain coarsely chopped.
  3. Form the patties: Transfer the mixture to a bowl and combine well. Shape the mixture into eight even patties. Place the patties on the prepared baking sheet and refrigerate uncovered for 30 minutes to firm up.
  4. Cook the salmon cakes: Heat olive oil in a large non-stick frying pan over medium-high heat. Add the salmon cakes and cook for 4-5 minutes until the bottoms are golden brown. Carefully flip each patty and cook for another 4-5 minutes until golden and cooked through.
