Description

Lasagna Soup is a comforting and hearty Italian-inspired soup that captures all the flavors of traditional lasagna in a warm, easy-to-make bowl. It features flavorful Italian sausage, savory tomatoes, tender pasta, and a creamy cheese topping, making it perfect for cozy dinners.

Ingredients

Scale

Meat and Veggies

  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced

Soup Base

  • 1 can (28 ounces) crushed tomatoes
  • 6 cups chicken broth
  • 2 teaspoons Italian seasoning

Pasta

  • 8 ounces lasagna noodles, broken into pieces

Cheeses

  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Garnish

  • 1 tablespoon fresh basil, chopped

Instructions

  1. Brown the Sausage: In a large pot over medium heat, cook the Italian sausage until it is fully browned, stirring occasionally to break it up. Once cooked, drain any excess fat to keep the soup from being too greasy.
  2. Sauté Aromatics: Add olive oil to the pot along with the diced onion and minced garlic. Sauté these ingredients until the onion becomes translucent and fragrant, which will build a flavorful base for the soup.
  3. Add Tomatoes and Broth: Stir in the crushed tomatoes, chicken broth, and Italian seasoning. Bring the mixture to a simmer, allowing the flavors to meld together gently.
  4. Cook the Pasta: Add the broken lasagna noodles to the simmering soup. Cook until the pasta is al dente, tender but still slightly firm to the bite, usually about 8-10 minutes.
  5. Prepare Cheese Mixture: In a separate bowl, combine the ricotta cheese with half of the shredded mozzarella and half of the grated Parmesan. Mix well to create a creamy topping.
  6. Serve: Ladle the hot soup into bowls and top each serving with the prepared cheese mixture followed by the remaining mozzarella and Parmesan cheeses for extra cheesy goodness.
  7. Garnish: Sprinkle chopped fresh basil over the top of each bowl to add a fresh herbaceous note and vibrant color before serving.

Notes

  • You can substitute turkey sausage for a leaner option.
  • Fresh lasagna noodles can be used for a softer texture; adjust cooking time accordingly.
  • For a vegetarian version, substitute sausage with plant-based crumbles and use vegetable broth instead of chicken broth.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated gently on the stovetop.
  • Adding a pinch of red pepper flakes can give the soup a nice spicy kick if desired.
