Ingredients
Scale
Main Ingredients
- 1 pound lean ground beef
- 1 medium onion, finely chopped
- 2–3 cloves garlic, minced
- 1 cup diced bell peppers (any color)
- 1 can diced tomatoes (preferably with herbs), 14.5 oz
- 2 cups uncooked elbow macaroni or egg noodles
- 2 cups low-sodium beef broth
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Optional: shredded cheese for topping (about ½ cup)
- Olive oil for sautéing (about 1 tablespoon)
Instructions
- Sauté Vegetables: Heat a splash of olive oil in a large skillet over medium heat. Add chopped onion and diced bell peppers, and sauté for about 5 minutes until softened and fragrant.
- Brown Ground Beef: Push the sautéed vegetables to the side of the skillet and add the lean ground beef. Cook for 6 to 8 minutes, breaking it apart with a spatula until fully browned and cooked through.
- Add Garlic and Tomatoes: Add the minced garlic to the skillet and cook for an additional 1 minute. Then stir in the canned diced tomatoes with their juices, mixing everything well.
- Simmer with Pasta and Broth: Pour in the low-sodium beef broth and add the uncooked pasta. Stir to combine thoroughly and prevent the pasta from clumping together. Cover the skillet and let it simmer for 10 to 12 minutes or until the pasta is tender and has absorbed much of the liquid.
- Season and Finish: Stir in the Italian seasoning, salt, and pepper to taste. If desired, sprinkle shredded cheese on top and allow it to melt before serving.
- Serve: Serve the goulash hot as a wholesome, comforting meal perfect for any cozy night.
