Description

Hillbilly Pie is a classic, comforting dessert featuring a creamy custard filling baked inside a crisp pre-made pie crust. This simple yet delicious pie combines sweetened milk and egg yolks thickened to a silky consistency, perfect for an easy homemade treat.

Ingredients

Scale

Pie Crust

  • 1 pre-made pie crust

Filling

  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 tablespoon cornstarch
  • 1 1/2 cups whole milk
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter

Instructions

  1. Preheat and partially bake crust: Preheat your oven to 350°F (175°C). Fit the pre-made pie crust into a pie dish and bake for 10 minutes, or until the crust is lightly golden.
  2. Mix dry ingredients: In a medium saucepan, combine the brown sugar, white sugar, and cornstarch to create the base for the custard filling.
  3. Add milk: Gradually whisk in the whole milk until the sugar and cornstarch mixture is completely smooth without lumps.
  4. Cook custard base: Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens to a custard-like consistency, being careful not to burn or curdle it.
  5. Incorporate egg yolks, vanilla, and butter: Remove the saucepan from heat. Whisk in the egg yolks quickly to temper them, followed by the vanilla extract and butter, mixing until the filling is smooth and well combined.
  6. Fill pie and bake: Pour the prepared custard filling into the partially baked pie crust. Return the pie to the oven and bake for 25-30 minutes, or until the filling is set and slightly firm to the touch.
  7. Cool and serve: Remove the pie from the oven and allow it to cool completely on a wire rack before slicing and serving to let the filling fully set.

Notes

  • Be sure to stir constantly while cooking the custard to prevent lumps and burning.
  • Tempering the egg yolks by adding a small amount of hot custard mixture before mixing will avoid scrambling.
  • Letting the pie cool completely is essential for the filling to firm up properly.
  • You can garnish with whipped cream or fresh fruit for extra flavor.
