Ingredients
Scale
Chicken and Marinade
- 500 grams (1 pound) chicken breast, cut into bite-sized pieces
- 60 milliliters (1/4 cup) soy sauce
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced or grated
- 2 tablespoons sesame oil
Vegetables
- 4 green onions, chopped (white and green parts separated)
- 1 medium red bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 1 medium zucchini, sliced
Cooking
- 2 tablespoons vegetable oil (for cooking)
- Salt and pepper, to taste
- Sesame seeds, for garnish (optional)
Instructions
- Marinate the chicken: In a bowl, combine the chicken pieces with soy sauce, minced garlic, grated ginger, and sesame oil. Mix well to ensure the chicken is fully coated. Cover and let it marinate for at least 30 minutes to absorb all the flavors.
- Prepare the vegetables: While the chicken marinates, wash and slice the red and yellow bell peppers, slice the zucchini, and chop the green onions separating the white parts from the green parts for staggered cooking.
- Cook the chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken to the hot pan and cook, stirring occasionally, until the chicken is browned and cooked through, about 6-8 minutes.
- Stir-fry the vegetables: Add the white parts of the green onions, sliced bell peppers, and zucchini to the skillet with the chicken. Stir-fry together for 3-4 minutes until the vegetables are tender-crisp and slightly roasted.
- Finish and serve: Season the combined chicken and vegetables with salt and pepper to taste. Garnish with the green parts of the chopped green onions and optionally sprinkle sesame seeds on top. Serve the hibachi chicken hot, ideally with steamed rice or noodles.
Notes
- Marinating the chicken for longer than 30 minutes intensifies the flavors—up to 2 hours in the refrigerator works well.
- You can substitute chicken breast with thigh meat for a juicier texture.
- For added spice, sprinkle red chili flakes or add a dash of sriracha sauce while stir-frying.
- Feel free to add other vegetables like mushrooms or onions to customize the dish.
- Ensure the skillet or wok is hot before adding the chicken to get a nice sear and lock in juices.
