- 1 cup mango chunks

- 1 tablespoon lemon juice
Gelling Agent
- 3 tablespoons unflavored gelatin
Instructions
- Prepare the fruit and vegetables: Hull and chop the strawberries, and cut the mango into chunks. Steam the carrots and sweet potato until tender. This softens the vegetables to blend smoothly with the fruit.
- Blend the ingredients: Add the strawberries, mango, steamed carrots, steamed sweet potato, apple juice, honey or maple syrup, and lemon juice to a blender. Blend until the mixture is completely smooth, ensuring no lumps remain.
- Heat and dissolve gelatin: Pour the blended mixture into a saucepan and heat over low heat. Gradually whisk in the unflavored gelatin, stirring consistently for about 3 to 5 minutes until the gelatin is fully dissolved and the mixture is smooth without any clumps.
- Set the mixture: Remove the saucepan from the heat and carefully pour the mixture into silicone molds or a parchment-lined baking dish for easy removal.
- Refrigerate to firm: Place the molds or dish in the refrigerator and chill for at least 2 hours, or until the fruit snacks are firm and set.
- Unmold and store: Once firm, remove the fruit snacks from the molds and store them in an airtight container in the refrigerator. They will keep fresh for up to one week.
