Description

These Healthy Hidden Veggie Fruit Snacks are a delicious and nutritious treat that cleverly incorporates steamed carrots and sweet potatoes into a sweet fruit gummy. Perfect for kids and adults alike, they combine the natural flavors of strawberries, mango, and a hint of lemon with a touch of honey for sweetness. Made with unflavored gelatin, these homemade fruit gummies are gluten-free and can be customized with different veggie purees or adapted to be vegan using agar agar. Easy to prepare on the stovetop, they make for a fun snack that sneaks in extra vegetables without sacrificing taste.

Ingredients

Scale

Fruit and Vegetables

  • 1 cup strawberries, hulled and chopped
  • 1 cup mango chunks
  • 1/2 cup steamed carrots
  • 1/2 cup steamed sweet potato

Liquids and Sweeteners

  • 1/4 cup apple juice
  • 3 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice

Gelling Agent

  • 3 tablespoons unflavored gelatin

Instructions

  1. Prepare the fruit and vegetables: Hull and chop the strawberries, and cut the mango into chunks. Steam the carrots and sweet potato until tender. This softens the vegetables to blend smoothly with the fruit.
  2. Blend the ingredients: Add the strawberries, mango, steamed carrots, steamed sweet potato, apple juice, honey or maple syrup, and lemon juice to a blender. Blend until the mixture is completely smooth, ensuring no lumps remain.
  3. Heat and dissolve gelatin: Pour the blended mixture into a saucepan and heat over low heat. Gradually whisk in the unflavored gelatin, stirring consistently for about 3 to 5 minutes until the gelatin is fully dissolved and the mixture is smooth without any clumps.
  4. Set the mixture: Remove the saucepan from the heat and carefully pour the mixture into silicone molds or a parchment-lined baking dish for easy removal.
  5. Refrigerate to firm: Place the molds or dish in the refrigerator and chill for at least 2 hours, or until the fruit snacks are firm and set.
  6. Unmold and store: Once firm, remove the fruit snacks from the molds and store them in an airtight container in the refrigerator. They will keep fresh for up to one week.

Notes

  • You can substitute spinach or pumpkin puree for the carrots or sweet potato to vary the flavor and nutrients.
  • For a vegan alternative, replace the gelatin with agar agar powder following the package instructions for setting.
  • Store the fruit snacks chilled in an airtight container for up to one week to maintain freshness and texture.
