Instructions
- Preheat Oven & Prep Pan: Preheat your oven to 350°F (175°C). Grease or line a 9-inch round or square baking pan to prevent sticking and ensure easy removal of the cake.
- Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, ground cinnamon, ground nutmeg, and salt. Stir until all dry ingredients are evenly distributed.
- Mix Wet Ingredients: In a separate bowl, whisk together the eggs, maple syrup or honey, unsweetened applesauce, milk, and vanilla extract until smooth and well blended.
- Combine & Fold in Apples: Pour the wet ingredients into the dry ingredient bowl. Stir gently to combine everything thoroughly, then carefully fold in the diced apples and chopped nuts if using to distribute evenly.
- Bake: Pour the batter into the prepared baking pan, spreading it evenly. Place in the preheated oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean, indicating the cake is fully cooked.
- Cool & Serve: Remove the cake from the oven and allow it to cool for about 10 minutes. Slice and serve warm or at room temperature for a comforting and nutritious breakfast or snack.
