Ingredients
Scale
Marinade
- 1 cup olive oil
- 2/3 cup freshly squeezed lemon juice
- 5 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
- 1 Tablespoon dried minced onion (or freshly diced white onion)
Chicken
- 6 medium boneless, skinless chicken breasts
Instructions
- Prepare the Marinade: In a large bowl, whisk together olive oil, freshly squeezed lemon juice, minced garlic, salt, pepper, and dried minced onion until well combined.
- Marinate the Chicken: Add the chicken breasts to the marinade, turning them to ensure all pieces are fully coated. Cover the bowl with a lid or plastic wrap and refrigerate for at least 2 hours, or up to 8 hours for enhanced flavor.
- Preheat the Grill: When ready, prepare your grill to medium heat. This usually means heating the grill for about 10-15 minutes, maintaining a temperature near 350-400°F (175-200°C).
- Grill the Chicken: Drain the chicken breasts from the marinade, discarding the leftover marinade. Place the chicken on the grill rack and cover the grill with the lid. Grill on the first side for 7 minutes.
- Flip and Continue Grilling: Turn the chicken over and grill for an additional 7 minutes or until fully cooked through and the internal temperature reaches 165°F (74°C).
- Serve: Remove the chicken from the grill and serve warm. Enjoy your delicious grilled lemon chicken with your choice of sides.
Notes
- Marinating the chicken for longer than 2 hours will deepen the flavor but do not exceed 8 hours to prevent the acid in the lemon juice from breaking down the chicken texture too much.
- Use a meat thermometer to ensure the chicken is cooked safely to 165°F internal temperature.
- For a zestier flavor, you can add lemon zest to the marinade.
- If you don’t have a grill, the chicken can be cooked under a broiler or on a grill pan on the stovetop.
