Ingredients
Scale
Shrimp and Sauce
- 20 large shrimp, peeled and deveined
- 1 tablespoon olive oil (for sautéing)
- 3-4 cloves garlic, finely minced
- ¼ teaspoon red chili flakes
- 1 tablespoon lemon juice, freshly squeezed
- Salt, to taste
- Pepper, to taste
Zucchini Noodles
- 4 medium zucchini, spiralized or julienned into noodles
- 2 tablespoons fresh parsley, finely chopped (for garnish)
Instructions
- Prepare the skillet: Heat 1 tablespoon of olive oil in a large skillet over medium heat to create the perfect base for sautéing the garlic and shrimp.
- Sauté garlic and chili flakes: Add the minced garlic and red chili flakes to the hot skillet. Cook for 40-60 seconds until fragrant, being careful not to let the garlic burn.
- Cook the shrimp: Add the shrimp along with 1 tablespoon of freshly squeezed lemon juice. Season with salt and pepper, then sauté for about 3 minutes on each side until the shrimp are pink and cooked through.
- Remove shrimp: Transfer the cooked shrimp from the skillet to a plate and set aside to keep warm.
- Cook zucchini noodles: Add the zucchini noodles to the same skillet and increase heat to high. Cook for 3-4 minutes, tossing frequently until the noodles are tender but still have a slight crunch.
- Combine and serve: Season the noodles with salt and pepper to taste, mix well, and either return the shrimp to the skillet to combine or serve the shrimp on the side.
- Garnish: Sprinkle the finely chopped fresh parsley over the dish before serving to add a fresh, herbal note.
Notes
- For best results, use fresh, large shrimp and spiralize zucchini just before cooking to maintain texture and flavor.
- If you prefer less heat, reduce or omit the red chili flakes.
- This dish can be easily doubled to serve more people.
- Zucchini noodles cook quickly, so avoid overcooking to prevent them from becoming mushy.
- You can substitute lemon juice with lime juice for a different citrus twist.
