Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting the potatoes evenly, giving them a crispy exterior.
  2. Prepare the potatoes: In a large bowl, toss the halved or quartered baby potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Mix until all potatoes are evenly coated with the herbs and oil.
