Description

This Garlic Herb Butter Roast Chicken recipe delivers a juicy and flavorful whole roasted chicken, infused with a delicious blend of fresh herbs and garlic butter. Perfectly roasted to golden perfection in the oven, this classic dish makes for an impressive yet easy meal for any occasion.

Ingredients

Scale

Chicken

  • 1 whole chicken (about 4-5 lbs)

Herb Butter

  • 1/2 cup unsalted butter, softened
  • 5 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 lemon, halved

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to ensure it reaches the right temperature for roasting the chicken to a crispy, golden skin.
  2. Prepare the herb butter: In a medium bowl, combine the softened butter with minced garlic, chopped thyme, rosemary, parsley, salt, and pepper, mixing until evenly blended.
  3. Dry the chicken: Pat the whole chicken dry thoroughly with paper towels to help the herb butter stick and the skin get crispy during roasting.
  4. Apply the herb butter: Rub the herb butter mixture all over the chicken, making sure to also spread some under the skin for maximum flavor penetration.
  5. Stuff the chicken cavity: Place the lemon halves inside the chicken’s cavity to infuse the meat with citrus aroma and moisture as it roasts.
  6. Position the chicken: Place the prepared chicken breast side up in a roasting pan to cook evenly.
  7. Roast the chicken: Roast the chicken in the preheated oven for approximately 1 hour and 15 minutes, or until a meat thermometer inserted in the thickest part of the thigh reads 165°F (75°C).
  8. Rest before carving: Remove the chicken from the oven and let it rest for 10-15 minutes to allow juices to redistribute, ensuring juicy and tender meat when carved.

Notes

  • Make sure the chicken is fully thawed before starting to ensure even cooking.
  • Use a meat thermometer to check doneness for the safest and juiciest results.
  • Letting the chicken rest is key to prevent dry meat.
  • You can save leftover herb butter for spreading on bread or vegetables.
  • Adjust herbs based on availability or personal preference.
