Shrimp Scampi

White Sauce (Béchamel)

Lasagna Assembly
- 12 lasagna noodles, cooked
- 2 cups ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the lasagna later.
- Prepare the Shrimp Scampi: In a skillet, melt 4 tablespoons of butter over medium heat and sauté the minced garlic until fragrant. Add the peeled and deveined shrimp, cooking until they turn pink and are just cooked through. Stir in the chicken broth, lemon juice, and chopped parsley. Season with salt and pepper to taste, then remove from heat.
- Make the White Sauce: In a separate saucepan, melt 4 tablespoons of butter. Whisk in 4 tablespoons of all-purpose flour and cook briefly to form a roux. Gradually add 4 cups of milk, whisking continuously to avoid lumps. Bring the mixture to a simmer until it thickens into a smooth béchamel sauce. Stir in grated Parmesan cheese, ground nutmeg, salt, and pepper to taste. Remove from heat once smooth and thickened.
- Prepare the Ricotta Mixture: In a bowl, combine 2 cups of ricotta cheese with 1 egg. Mix until smooth and fully incorporated.
- Assemble the Lasagna: Spread a layer of white sauce on the bottom of a baking dish. Arrange a layer of cooked lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, then spoon half of the shrimp scampi evenly on top. Repeat layering with noodles, remaining ricotta mixture, and remaining shrimp scampi. Finish with a final layer of noodles and cover with the remaining white sauce. Sprinkle 2 cups of shredded mozzarella cheese evenly over the top.
- Bake: Place the assembled lasagna in the preheated oven. Bake for 25-30 minutes, or until the cheese is melted, bubbly, and golden brown on top.
- Serve: Remove the lasagna from the oven and let it cool slightly. Garnish with additional chopped fresh parsley before serving for a fresh burst of flavor and color.
