  • 2 tablespoons (30 g) melted butter
  • 2 teaspoons (10 ml) soy sauce
  • 2 teaspoons (10 ml) balsamic vinegar
  • 2 teaspoons minced garlic
  • 2 teaspoons chopped thyme, or 1 teaspoon dried thyme
  • 1 teaspoon parsley (for garnish)


Instructions

  1. Heat the Oven: Preheat your oven to 450ºF (232ºC) and position the oven rack in the lowest position to ensure direct heat for the mushrooms, which helps evaporate moisture quickly and promotes caramelization.
  2. Prepare the Mushrooms: Rinse the mushrooms thoroughly and pat them dry. Trim the stems and cut mushrooms based on size: leave small mushrooms (1 to 1½ inches) whole, halve medium mushrooms (1½ to 2 inches), and quarter large mushrooms (over 2 inches) to ensure even cooking.
  3. Season the Mushrooms: In a large mixing bowl, toss the mushrooms with olive oil, kosher salt, and black pepper until evenly coated.
  4. Roast Initially: Spread the seasoned mushrooms evenly in a single layer on a rimmed baking sheet. Roast for about 25 to 30 minutes until the liquid released by the mushrooms evaporates and they start to brown. Stir once halfway through roasting to promote even cooking and caramelization.
  5. Add the Sauce: In a small bowl, combine melted butter, soy sauce, balsamic vinegar, minced garlic, and chopped thyme. Pour this mixture over the roasted mushrooms and stir well to coat.
