Scale
Main Ingredients
- 6 cups crispy rice cereal
- 1/4 cup unsalted butter
- 1 (10-ounce) bag mini marshmallows
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
Optional Toppings
- 1/2 cup mini marshmallows (optional, for topping)
- 1/4 cup peanut butter drizzle or melted peanut butter (optional, for topping)
Instructions
- Prepare Baking Dish: Grease a 9×13-inch baking dish with butter or cooking spray and set it aside to prevent the treats from sticking.
- Melt Butter and Marshmallows: In a large saucepan, melt the unsalted butter over medium heat. Add the mini marshmallows and stir continuously until they are completely melted and smooth.
- Add Peanut Butter and Vanilla: Stir in the creamy peanut butter until fully incorporated into the melted marshmallow mixture, then remove the saucepan from heat. Add the vanilla extract and stir well.
- Combine with Cereal: Quickly pour the marshmallow-peanut butter mixture over the crispy rice cereal in a large mixing bowl and stir thoroughly until the cereal is evenly coated.
- Press Into Dish: Transfer the mixture into the prepared baking dish. Use a greased spatula or a piece of wax paper to press and smooth the top evenly.
- Add Toppings: If desired, sprinkle additional mini marshmallows on top and gently press them into the surface. Drizzle with melted peanut butter to add an extra layer of flavor.
- Set and Slice: Let the treats cool and set at room temperature for about 30 minutes until firm. Once set, slice into squares and serve.
Notes
- Use a greased spatula or wax paper to press the mixture so it doesn’t stick to your hands.
- For variation, try using crunchy peanut butter for added texture.
- These treats can be stored in an airtight container at room temperature for up to 3 days.
- To speed up setting time, refrigerate the treats for 15-20 minutes.
- Peanut butter drizzle can be heated gently in the microwave or on the stovetop to achieve a pourable consistency.
