Ingredients
Scale
Chicken Marinade
- 2 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lime
Sandwich Assembly
- 4 telera or bolillo rolls, sliced
- 1/2 cup refried beans
- 1 ripe avocado, sliced
- 1/2 cup shredded lettuce
- 1/2 cup sliced tomatoes
- 1/4 cup sliced red onion
- 1/4 cup pickled jalapeños
- 1/2 cup crumbled queso fresco
- 1/4 cup mayonnaise
- 1 tablespoon chipotle in adobo, minced
Instructions
- Marinate the Chicken: In a bowl, combine olive oil, chili powder, garlic powder, smoked paprika, cumin, salt, black pepper, and lime juice. Coat the chicken breasts evenly with this marinade and let them sit for at least 20 minutes to absorb the flavors.
- Cook the Chicken: Heat a skillet or grill over medium heat. Cook the marinated chicken breasts for 5 to 7 minutes on each side until fully cooked through. Once done, remove from heat and let the chicken rest for a few minutes before slicing thinly.
- Prepare the Chipotle Mayo: In a small bowl, mix the mayonnaise with the minced chipotle in adobo to create a smoky and spicy spread.
- Toast the Rolls: Lightly toast the telera or bolillo rolls until they are warm and slightly crisp on the outside to add texture to the sandwich.
- Assemble the Torta: Spread refried beans generously on the bottom half of each toasted roll. Spread the chipotle mayo on the top half. Layer with sliced chicken, avocado slices, shredded lettuce, tomatoes, red onion, pickled jalapeños, and crumbled queso fresco.
- Finish and Serve: Close the sandwich, press it gently to hold all the layers together, and serve immediately while warm and fresh.
Notes
- You can substitute grilled chicken with rotisserie chicken to save time and still enjoy great flavor.
- Adding a slice of cheese such as Oaxaca or mozzarella can enhance the richness of the sandwich.
- For extra crunch and texture, consider adding sliced radishes or shredded cabbage as additional toppings.
