Instructions
- Sauté vegetables: Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, until the vegetables become slightly tender, about 5 minutes.
- Add cabbage and spices: Stir in the chopped cabbage, minced garlic, ginger paste, turmeric, salt, and pepper. Continue cooking, stirring frequently, until the cabbage wilts and softens, which should take a few minutes.
- Simmer the soup: Pour the diced tomatoes along with their juices and the vegetable broth into the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until all the vegetables are tender and the flavors meld together.
