- 1/2 cup nutritional yeast
- 3/4 cup water (adjust consistency as needed)
- 1 tablespoon white miso paste
- 1 teaspoon onion powder
- 1 tablespoon vegetable broth powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 2 teaspoons dried thyme leaves (plus 1 teaspoon more for glaze)
- 1 teaspoon ground sage
- 1 cup vital wheat gluten
Glaze and Finishing
- 1/4 cup vegan butter (melted)
- 2 cloves garlic, minced or pressed
- 2 tablespoons soy sauce
- 1/2 teaspoon black pepper
- 1 sheet rice paper (for crispy outer layer)
Instructions
- Blend: Add the drained firm tofu, nutritional yeast, water, white miso paste, onion powder, vegetable broth powder, garlic powder, salt, 2 teaspoons dried thyme, and ground sage into a food processor. Blend until the mixture is smooth and creamy.
- Mix: Fold the vital wheat gluten into the tofu mixture and blend or knead until a soft, pliable dough forms. If the dough is too dry, add water one tablespoon at a time to reach the right consistency.
- Shape: Mold the dough into an oval roast shape, then wrap it securely in two layers of aluminum foil to prepare for steaming.
- Steam: Place the wrapped roast in a steaming basket over boiling water and steam for 1 hour. After steaming, let the roast cool completely before proceeding.
- Preheat: Preheat the oven to 400°F (200°C). In a bowl, mix the melted vegan butter, minced garlic, soy sauce, 1 teaspoon dried thyme, and black pepper to create the glaze.
- Brush: Unwrap the cooled roast and place it on a greased baking tray. Generously brush the buttery glaze all over the surface of the roast.
- Wrap: Soften the rice paper sheet by soaking it in water for about 30 seconds. Drape the softened rice paper over the roast and brush it with more of the buttery glaze to help it adhere and add flavor.
- Bake: Bake the roast in the preheated oven for 15 minutes. Then brush with any remaining glaze and continue baking for another 15 to 25 minutes until the rice paper outer layer is golden brown and crispy.
- Cool & Serve: Allow the roast to cool for about 10 minutes after baking. Slice and serve either hot or chilled as desired.
