Ingredients
Scale
Carrots
- 1 pound carrots (baby carrots or larger ones)
Seasonings & Toppings
- 2 tablespoons olive oil (for roasting)
- 1 teaspoon garlic powder (can substitute with fresh minced garlic)
- 1 teaspoon smoked paprika (substitute with sweet paprika if preferred)
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon black pepper (adjust to taste)
- 1/4 cup Parmesan cheese (can replace with Asiago or Pecorino)
Instructions
- Boil the Carrots: Start by boiling the carrots in water until they are fork-tender, about 10 minutes. Avoid overcooking to keep the carrots from becoming too soft and losing shape.
- Smash the Carrots: Let the boiled carrots cool slightly until they are safe to handle. Then, gently smash each carrot using the bottom of a glass or your hand to flatten them without breaking them apart completely.
- Season the Carrots: In a mixing bowl, combine the smashed carrots with garlic powder, smoked paprika, olive oil, salt, and black pepper. Toss everything together well to evenly coat the carrots with seasoning and oil.
- Roast the Carrots: Arrange the seasoned carrots on a parchment-lined baking sheet in a single layer. Roast them in a preheated oven at 425°F (220°C) for 20 to 25 minutes or until they are crispy and golden on the edges.
- Add Cheese and Serve: Once roasted, sprinkle the carrots with Parmesan cheese for a savory finish. Serve these crispy smashed carrot bites immediately while hot and crunchy for the best taste.
Notes
- Use baby carrots or larger carrots peeled and cut to similar size for even cooking.
- Adjust seasoning quantities based on your preference for spice and salt.
- Smoked paprika adds a smoky depth but can be replaced with regular sweet paprika if desired.
- Parmesan cheese can be substituted with Asiago or Pecorino cheese for a different cheese flavor.
- Serve these bites as an appetizer, side dish, or party snack for versatile use.
