Instructions

  1. Boil Water and Simmer Spices: In a saucepan, bring 1 ½ cups of water to a boil. Once boiling, add the cinnamon stick, cardamom pods, sliced fresh ginger, and whole cloves. Lower the heat and let the mixture simmer gently for about 5 minutes to infuse the water with spice flavors.
  2. Steep Tea: Add the black tea leaves or tea bags to the simmering spiced water. Allow the tea to steep for 3 to 5 minutes depending on your preferred strength.
  3. Add Coconut Milk: Pour in the full-fat coconut milk and stir the mixture gently. Let it continue to simmer for an additional 2 to 3 minutes so the chai becomes creamy and well blended.
  4. Sweeten the Chai: Stir in coconut sugar to taste. Adjust the sweetness as desired by adding more or less sugar.
  5. Strain and Serve: Carefully strain the chai through a fine sieve into cups to remove all whole spices and tea leaves. Garnish with a sprinkle of ground cinnamon or a piece of star anise for an extra aromatic touch.
