Instructions

  1. Preparation: Gather all ingredients and prepare pineapple by dicing the spears finely. Zest and juice the limes, and rinse the blackberries thoroughly.
  2. Blend Base Mixture: Add the diced pineapple, coconut milk, coconut cream, sweetened condensed milk, lime juice, and zest into a blender. Blend for 1-2 minutes until the mixture is smooth and creamy.
  3. Separate Mixture: Pour 1/4 of the blended mixture into a liquid measuring cup and refrigerate the remaining 3/4 of the mixture for later use.
  4. Create Blackberry Mixture: Add the fresh blackberries to the blender and blend until smooth. Pass the blended blackberries through a fine mesh sieve into the measuring cup containing the pineapple mixture, stirring gently to combine the two mixtures.
  5. Assemble Ice Pops: Fill ice pop sleeves or molds by first adding some pineapple-coconut blend, then a layer of the blackberry mixture, and finishing with more pineapple-coconut blend.
  6. Create Swirls: Using a skewer or thin stick, gently swirl the mixtures inside the molds to create a marbled effect. Seal up the sleeves or cover the molds tightly.
  7. Freeze: Place the filled molds or sleeves in the freezer and freeze the ice pops for at least 6 hours or until fully firm.
