Ingredients
Scale
Fruit and Citrus
- 2 pounds Pineapple spears, diced (for tropical sweetness)
- 2 limes, juice and zest (for zesty kick)
- 1 pound Blackberries (for a beautiful purple swirl)
Dairy and Cream
- 1 (15 ounces) can Coconut milk, unsweetened (for rich creaminess)
- 0.5 (15 ounces) can Coconut cream, unsweetened (for decadent creaminess)
- 1 (14 ounces) can Sweetened condensed milk (to add sweetness)
Instructions
- Preparation: Gather all ingredients and prepare pineapple by dicing the spears finely. Zest and juice the limes, and rinse the blackberries thoroughly.
- Blend Base Mixture: Add the diced pineapple, coconut milk, coconut cream, sweetened condensed milk, lime juice, and zest into a blender. Blend for 1-2 minutes until the mixture is smooth and creamy.
- Separate Mixture: Pour 1/4 of the blended mixture into a liquid measuring cup and refrigerate the remaining 3/4 of the mixture for later use.
- Create Blackberry Mixture: Add the fresh blackberries to the blender and blend until smooth. Pass the blended blackberries through a fine mesh sieve into the measuring cup containing the pineapple mixture, stirring gently to combine the two mixtures.
- Assemble Ice Pops: Fill ice pop sleeves or molds by first adding some pineapple-coconut blend, then a layer of the blackberry mixture, and finishing with more pineapple-coconut blend.
- Create Swirls: Using a skewer or thin stick, gently swirl the mixtures inside the molds to create a marbled effect. Seal up the sleeves or cover the molds tightly.
- Freeze: Place the filled molds or sleeves in the freezer and freeze the ice pops for at least 6 hours or until fully firm.
- Serve: Once frozen solid, remove the ice pops from their molds and enjoy a refreshing, creamy, and fruity treat.
Notes
- For easier consumption, run the ice pop molds under warm water for a few seconds to loosen before removing.
- You can adjust sweetness by altering the amount of sweetened condensed milk to taste.
- Ensure the blackberry puree is strained well to remove seeds for a smoother texture.
- Use unsweetened coconut milk and cream to control the overall sweetness and richness of the pops.
- The lime zest and juice add balance and brightness to the sweetness, but can be adjusted or omitted based on preference.
- These ice pops work best with reusable ice pop molds or freezer-safe sleeves designed for easy popping.
