Description

Crab Stuffed Morel Mushrooms are a delectable seafood appetizer featuring fresh morel mushrooms filled with a creamy, flavorful crab mixture. Baked to perfection with a golden breadcrumb topping, they offer a delightful combination of textures and rich taste, perfect for entertaining or a special starter.

Ingredients

Scale

Morel Mushrooms

  • 12 large fresh morel mushrooms, cleaned and halved lengthwise

Crab Filling

  • 8 ounces lump crab meat, picked over for shells
  • 4 ounces cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons finely chopped green onions
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Topping and Finishing

  • 2 tablespoons breadcrumbs
  • 1 tablespoon olive oil

Instructions

  1. Preheat and prepare dish: Preheat the oven to 375°F (190°C) and lightly grease a baking dish to prevent sticking.
  2. Clean and prepare mushrooms: Gently rinse the morel mushrooms to remove any dirt and pat them dry with paper towels. Slice each mushroom in half lengthwise if not already halved, creating cavities for stuffing.
  3. Mix crab filling: In a medium bowl, combine the lump crab meat with softened cream cheese, mayonnaise, grated Parmesan cheese, chopped green onions, fresh parsley, lemon juice, garlic powder, paprika, salt, and black pepper. Mix thoroughly until all ingredients are well blended and creamy.
  4. Stuff mushrooms: Spoon the crab mixture generously into each morel mushroom cavity, ensuring even filling distribution.
  5. Arrange and top: Place the stuffed morel mushrooms evenly in the prepared baking dish. Sprinkle the tops lightly with breadcrumbs for a crunchy topping, then drizzle olive oil over them to assist in browning.
  6. Bake: Bake the stuffed mushrooms in the preheated oven for 15 to 18 minutes, or until the filling is heated through and the breadcrumb topping is lightly golden and crisp.
  7. Serve: Remove from the oven and serve the crab stuffed morel mushrooms warm for the best flavor and texture.

Notes

  • Thoroughly clean morel mushrooms to remove any dirt and grit before cooking.
  • Substitute panko breadcrumbs for a lighter, crunchier topping if desired.
  • A squeeze of fresh lemon juice just before serving brightens the flavors.
