Ingredients
Scale
Chicken and Rice Bake
- 1½ lbs chicken thighs
- 1 cup long grain rice
- 2½ cups chicken broth
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt & pepper to taste
Toppings
- 1 cup tzatziki sauce
- Fresh dill for garnish
- Lemon wedges for garnish
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish thoroughly to prevent sticking.
- Prepare Rice Mixture: In the greased baking dish, combine the rice, chicken broth, olive oil, garlic powder, salt, and pepper. Stir well to evenly distribute the seasonings.
- Arrange Chicken: Season the chicken thighs with salt and pepper. Nestle them into the rice mixture, spacing the pieces evenly to ensure even cooking. Cover the dish tightly with aluminum foil to trap steam.
- Bake: Place the covered dish in the preheated oven and bake for 45–50 minutes, or until the rice is tender and the chicken is fully cooked through (internal temperature should reach 165°F or 74°C).
- Add Toppings: Remove the foil carefully and discard it. Dollop the chicken thighs with tzatziki sauce, then garnish with fresh dill and a squeeze of lemon juice for brightness.
- Serve: Serve the bake hot, enjoying the creamy tang of tzatziki against the savory baked chicken and rice.
Notes
- For best results, use bone-in, skinless chicken thighs for juiciness and flavor.
- If you prefer, you can substitute brown rice but increase the cooking time accordingly.
- Make sure the baking dish is tightly covered to allow the rice to properly absorb the broth and cook evenly.
- Tzatziki sauce can be homemade or store-bought for convenience.
- Leftovers can be refrigerated for up to 3 days and reheated gently in the oven or microwave.
