Ingredients
Scale
Beef and Vegetables
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
Tomato Sauce
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Pasta and Cheese
- 8 oz rotini pasta
- 1 1/2 cups shredded cheddar cheese
Instructions
- Heat olive oil: In a large skillet, heat 1 tablespoon of olive oil over medium heat to prepare for sautéing the beef and vegetables.
- Cook beef and vegetables: Add 1 lb of ground beef along with the diced onion, green bell pepper, and red bell pepper to the skillet. Cook, stirring occasionally, until the beef is fully browned and the vegetables become tender, about 5 to 7 minutes.
- Add garlic: Stir in the minced garlic and cook for an additional minute to release its aroma and flavor.
- Simmer sauce: Pour in the diced tomatoes and tomato sauce, then season with Italian seasoning, salt, and black pepper. Stir well and let the mixture simmer on low heat for 10 minutes, stirring occasionally to blend the flavors.
- Cook pasta: While the sauce simmers, prepare the rotini pasta according to the package instructions until al dente. Drain well and set aside.
- Combine pasta and sauce: Add the cooked pasta directly into the skillet with the beef and vegetable sauce. Mix thoroughly to combine all ingredients evenly.
- Add cheese: Sprinkle 1 1/2 cups of shredded cheddar cheese over the pasta mixture. Stir gently until the cheese melts completely and coats the pasta nicely.
- Serve and enjoy: Serve the cheesy beef pasta hot for a satisfying and hearty meal.
Notes
- You can substitute rotini with any other pasta like penne or fusilli as preferred.
- For extra flavor, add a pinch of red pepper flakes when simmering the sauce.
- Use low-fat cheese or reduced-fat beef for a lighter version of this dish.
- Leftovers can be refrigerated for up to 3 days and reheated in a skillet or microwave.
