Description

  • 4 large eggs
  • 1/4 cup milk (or heavy cream/coconut milk)
  • 1/4 cup fresh basil leaves, chopped
  • Salt, to taste

  • 1/2 cup fresh mozzarella cheese, sliced or shredded
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar


Instructions

  1. Whisk the Egg Mixture: In a medium bowl, whisk together the eggs, milk, chopped basil, salt, and pepper until fully combined and slightly frothy to ensure a light and fluffy frittata.
  2. Cook the Eggs: Heat the olive oil in a skillet over medium heat. Pour in the egg mixture and let it cook undisturbed for about 2 minutes until the edges begin to set but the center is still slightly runny.
  3. Add Cheese & Broil: Evenly scatter the fresh mozzarella over the eggs. Transfer the skillet to the oven and broil for 2 to 3 minutes, or until the eggs are fully set and the cheese has melted and started to brown slightly on top.
  4. Prepare and Add Tomatoes: While broiling, blister the cherry tomatoes in a separate pan with a bit of olive oil or simply toss them in the hot skillet until they soften and char slightly. Add these blistered tomatoes on top of the cooked frittata.
  5. Finish and Serve: Drizzle balsamic vinegar over the frittata, then serve immediately while hot and fragrant for a deliciously fresh meal.
